Ireland’s Craft Whiskey scene is on the rise.
The Dingle Distillery was launched in 2012 by three friends — Oliver Hughes, Liam LaHart and Peter Mosley — all of them veterans and pioneers of the Craft Beer revolution. As with many new producers, their budding Whiskey distillery began making Gin and Vodka while waiting for their Whiskey to mature. When Dingle started up in 2012, there were just two distilleries in Ireland, a country that once had more than 100. The founders wanted to create a new, artisan distillery to take on the big Irish brands.
Now their Whiskeys are here and they taste so good. Crafted with local well water, mashed manually, fermented in wooden vessels, and distilled using the 3 copper pot stills, the aging Single Malt juice thrives in the moist and mild coastal micro climate. Batch No.5 brings together Bourbon, Pedro Ximenez, and Madeira casks that blend the different worlds together with complex and delicious spice, honeycomb, and raisin notes.
